Step 8 - lift jars out of boiling water and let sit on the counter for about a day. Do not remove the rings until the jars are cool.
Once the jars start to cool, you'll hear a "popping" sound as the lids seal. Once the jars are cool, check to make sure all the lids are sealed by trying to flex them with your finger. If they are sealed, you can remove the rings to be used on another batch. If it pops up, remove the lid, put a new one on and reprocess the jar. This has only happened to me once.
Note that if you test the lids right after they come out of the water, they may still flex. Wait until you hear the "popping" sound and the jars are cool.
That's it! You now have applesauce that tastes so good you'll want to make enough to last all year. That's what I do - storebought is just disgusting by comparison!!
